
Sweet Potato, Sausage, & Kale Soup
Ingredients
1 Lg Yellow onion, diced
2 Garlic cloves, minced
1 T Olive oil
1 lb Ground Italian sausage
2 Sweet potatoes, cubed
4 C Chicken stock
2 C Water
1 C Pasta shells
4 C Kale, chopped
Salt and pepper
Parmesan Reggiano

Instructions
1. Heat olive oil in Dutch oven over medium high heat.
2. Add onion and garlic and cook, stirring occasionally, until soft, about 5 minutes. Season with salt and pepper.
3. Add the sausage to the pot, break up, and stir until browned, about 5 minutes.
4. Add the sweet potatoes, stock and water and bring to a boil.
5. Add the pasta for three minutes less than the package instructions.
6. Reduce to a simmer and add the kale stirring until all the greens are wilted, about 4 minutes.
7. Season with salt and pepper to taste.
